Aloha Quick Bread Recipe

There’s a lot of banana flavor in this.  As long as you’re okay with banana, this is good:

In a mixing bowl, mix together 1/2 cup softened butter and 1 cup sugar until creamy.  Beat in 2 eggs.  Then beat in 2 ripe mashed bananas (mashing them with a veggie masher and leaving it a little chunky should be fine).  Also beat in 1/4 cup milk, 1 tablespoon grated orange peel, 1 teaspoon vanilla extract, and 1/2 teaspoon almond extract.

In a separate bowl, combine 2 cups flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.  Add this to the creamy mixture and stir them together.

Fold into this mixture 1 cup flaked coconut, 1/2 cup chopped nuts (walnuts recommended), and 1/2 cup crushed pineapple.

Transfer the mixture to a loaf pan, 8 or 9 inches in length.  (Make sure the loaf pan is greased beforehand.)  Bake at 350 degrees for an hour and twenty minutes.  Let settle for a few minutes before trying.
